(Optional) Start the process by using your food processor to shred two cups of cheddar cheese.
(Optional) Use the food processor to shred the onion, celery, carrots, and broccolli.
In a large pot over medium high heat, melt butter. Add in onions, carrots and broccoli. Cook to soften about 3-5 minutes depending on if you shredded or chopped them.
Slowly add in chicken broth, milk, and cream. Sprinkle with flour and add salt, pepper and red pepper flakes. Continue stirring and heating over medium heat until thickened. This will take about 10-15 minutes.
Once thick, add cheese and stir until melted and smooth. Serve soup and enjoy!
Notes
A food processor isn't required. If you don't have one or want to use it, simply chop your vegetables according to your preference and use pre-shredded cheese.
